Let me know what becomes of these ideas. I've been curious about duck for a while now, but think I might start by eating it in resturants first..... I'm still a bit squimish with proteins....
Veal is SO good. Don't be afraid... Veal cutlets are amazing if they are really thin and breaded.
I make duck ALL THE TIME. Get one now before the holidays are officially over and they are no longer in the store. It will be frozen, and will last until you decide what to do about it.
I have veal in my freezer, and I am not too fond of it.
Oh.. we need to get together again, maybe just a cooking date because I can make octopus wonderfully.
